A decadent aromatic dark chocolate cookie. My biscotti is not a rock hard cookie, someone described it as a brownie with a crust. I use peppermint oil, as well as a pinch of espresso powder to bring out the depth of the chocolate. I also use peppermint candies that are crushed and sprinkled on top of the cookie giving them a festive look. Great as a dipper for strong coffee or hot chocolate!
